Obligatory “bring back the HBO TV App Channel” comment. Instead of turning them off, try setting them to Auto. Seems counterintuitive, but it worked for me. Same issue on my Apple TV 4K. I tried uninstalling HBO max, restarting Apple TV, and then reinstalling and still have subtitles start automatically. 😢.
